Cherry Blackberry Jam Cake

When looking for inspiration on how to celebrate the flavors of SchoolHouse Kitchen® Cherry Blackberry Sage & Clove Anytime Spreadable Fruit, we stumbled upon 101 Cookbooks' blog which reminded us of this old favorite, the Rombauer Jam Cake. This recipe was adapted from The Joy of Cooking by Irma S. Rombauer and Marion Rombauer Becker.

- 1½ cups sifted all-purpose flour

- 1 teaspoon baking powder

- 1/2 teaspoon baking soda

- 1/2 teaspoon ground cloves

- 1 teaspoon cinnamon

- 1 teaspoon nutmeg

- 6 tablespoons unsalted butter, softened
- 1 cup packed dark brown sugar

- 2 eggs

- 3 tablespoons sour cream

- 1 cup SchoolHouse Kitchen® Cherry Blackberry Sage & Clove Anytime Spreadable Fruit
- 1/2 cup walnuts, toasted and chopped

For the quick brown-sugar icing
- 1½ cups dark brown sugar

- 5 tablespoons heavy cream

- 2 teaspoons unsalted butter

- 1/8 teaspoon salt

- 1/2 teaspoon vanilla

Preheat oven to 350ºF. Butter a 7-inch tube pan or regular sized Bundt pan and sprinkle with flour. Sift together flour, baking powder, baking soda, cloves, cinnamon, and nutmeg.

Cream the butter and brown sugar until light. Beat in eggs, one at a time. Beat in sour cream. Stir the flour mixture into the butter mixture until barely blended. Stir in Cherry Blackberry Sage & Clove Anytime Spreadable Fruit and nuts. Pour into buttered pan. Bake until done, about 30-35 minutes. When cool, invert the cake onto a platter and ice with the quick brown-sugar icing.

Make the icing:
Combine brown sugar, cream, butter, and salt and cook slowly to the boiling point. Remove from heat. Cool slightly, then add vanilla. With an electric mixer, beat the icing until it is a spreadable consistency. [Alternatively, you can make a colorful glaze: heat ½ cup Cherry Blackberry Sage & Clove Anytime Spreadable Fruit in a saucepan. Remove from heat and whisk in 11/2 cups confectioner’s sugar (sifted). Add a bit of milk, or more confectioner's sugar, for desired consistency.]

Garnish with fresh blackberries.

Makes one cake.
