Grilled Pork Tenderloin

Easy enough for a family supper, this recipe can be doubled or tripled for a dinner party. Be sure to allow enough time for the meat to marinate. Can be served at room temperature for a luncheon or buffet. Pairs well with our Sweet & Zesty Wild Rice Salad.

- 1 lb. pork tenderloin
- ⅓ cup SchoolHouse Kitchen® Coconut Citrus Vinaigrette
- 1 teaspoon fresh ginger, grated
- 2 cloves garlic, minced
- 3 scallions, chopped
- salt and freshly ground pepper, to taste

Mix together in a small bowl the Coconut Citrus Vinaigrette, ginger, garlic, and scallions. Place pork tenderloin in shallow glass dish, and coat with the marinade. Place in refrigerator and marinate for at least an hour and better for 3 or 4 hours, turning occasionally. Prepare and preheat the grill. And grill the pork until medium, about 10-12 minutes per side. Or bake in a 350°F oven for about 30 to 40 minutes, depending on size of meat.
