- 6 sweet potatoes or yams, baked and mashed
- 6 tablespoons SchoolHouse Kitchen® Coconut Citrus Vinaigrette
- 2 eggs, beaten
- 1 teaspoon cinnamon
- 2 tablespoons unsalted butter
- 2-3 tablespoons dark brown sugar
Preheat oven to 350°F. Combine the baked and mashed sweet potatoes, the Coconut Citrus Vinaigrette, the eggs, cinnamon, and butter. Place in a greased casserole dish, and sprinkle brown sugar on top. Bake for 30 minutes, or until browned on top, in a hot oven.
