Grapefruit Fennel Salad

The spice of fresh fennel is balanced beautifully by ginger, add in a double dose of citrus and your palate will thank you. Serve with wine and crusty bread.

- 8 oz arugula
- 1 bulb fresh fennel, thinly sliced
- 2 grapefruits, supremed (sectioned)
- 2 avocados, sliced
- 2 tablespoons SchoolHouse Kitchen® Ginger Lime Vinaigrette

Dress the arugula with the Ginger Lime Vinaigrette and top with the fennel, grapefruit, and avocado.

Serves 4 to 6
