Recipe : Ginger Lime Vinaigrette : Island Salad

Island Salad

Dream of the tropics? We do too, and this refreshing salad offers the perfect escape to the warm balmy islands. We think a fruity drink or a crisp white wine would accompany this nicely.

- 1 head of romaine lettuce
- 3 seedless oranges, segmented
- 2 cups pineapple, cut into ½-inch cubes
- 3 bananas, cut in ½-inch slices and soaked in lemon water
- 2 Fuji apples, cut into cubes and soaked in lemon water
- ½ cup toasted coconut
- ½ cup toasted pine nuts
- 2 tablespoons fresh mint leaves, chopped
- 2 tablespoons SchoolHouse Kitchen® Ginger Lime Vinaigrette (or more to taste)

Mix the mint with the Ginger Lime Vinaigrette.

Combine oranges, pineapple, apples, and bananas with 1 tablespoon of Ginger Lime Vinaigrette.

Toss the greens with the remaining 1 tablespoon of Ginger Lime Vinaigrette. Place lettuce on platter and arrange fruit on top. Top with pine nuts and coconut.

Serves 6 to 8
