- 1 head of iceberg lettuce
- 2 fresh mangoes, peeled and diced
- ½ cup fresh papaya, diced
- 1 cucumber, peeled, seeded and diced
- 2 tablespoons red onion, minced
- 1 tablespoon fresh lime juice
- 1 teaspoon fresh cilantro or mint, chopped
- ¼ cup Cotija cheese, crumbled (could substitute fresh goat cheese)
- 4-6 tablespoons SchoolHouse Kitchen® Poppyseed Vinaigrette Revival
Slice iceberg head into four large wedges, place on individual plates. In a small bowl, combine the mango, papaya, cucumber, red onion, herb, lime juice, and Poppyseed Vinaigrette Revival. Spoon some fruit salsa on each wedge. Divide cheese among the plates.
