Grapefruit and Avocado Salad

A favorite combination made only better with SchoolHouse Kitchen®'s Poppyseed Vinaigrette Revival. This was one of Wendy's favorites as a child. We prefer to use red grapefruits, which offer a stellar balance of sweet and tart taste, but also add beautiful color to the plate.

- a head of Butter (or Boston) lettuce
- 2 red grapefruits, peeled and sectioned
- 1 ripe avocado, thinly sliced
- 2-4 tablespoons SchoolHouse Kitchen® Poppyseed Vinaigrette Revival
- pomegranate seeds for garnish

Decoratively place the lettuce on six plates. Place the sectioned grapefruit and the avocado slices in a bowl and cover with 2 to 4 tablespoons Poppyseed Vinaigrette Revival. Be careful not to break up the avocado. Distribute evenly over the prepared lettuce. Garnish with pomegranate seeds.
