Recipe : SweetSmoothHot Mustard : RackLamb

Herb Rubbed Rack of Lamb

We thought that the beef tenderloin was our easiest recipe, but this rack of lamb may just beat it. Follow these few steps and you will be happy you did.

- 1 rack of lamb
- 1 tablespoon SchoolHouse Kitchen® SweetSmoothHot Mustard
- 1 clove garlic (put through a garlic press)
- 1 teaspoon dried or 1 sprig fresh rosemary, cut up
- Freshly ground pepper

Combine the SweetSmoothHot Mustard, garlic, fresh rosemary, pepper and olive oil to make a paste. Rub on the outside of the rack of lamb and let rest for an hour or so before you grill or roast.

Serves 3-4
